About桜が満開 プログの引っ越し
桜が満開、艶めいていた地を、チラホラ散る桜の花びらが一気にあでやかな色合いに染める。
春の海は、ひねもす（終日）のたりのたりしているそうな。 のたりのたりしているこの季節の旬は「鯛」、コバルトブルーに輝く小斑点は鮮やかで宝石の様。
赤いひげ自慢の「ひめじ」に「シマアジ」「さより」「鰆』。春の魚は味よし、形よし、 色気よし。
昔は東京湾で白魚が獲れたそうな。 白魚を肴にきりっと冷えたワインは堪えられない。白魚はオリーブオイルでさっと炒めても美味い。
東京の大森海岸には獲れたてのカニを食べさせる店が並んでいたって言うが、今は面影すら無い。
子供の頃、朝早くから「アッサリー、シッジミー」と言う売り子の声で目が覚めたもんだが、昔はのどかだったのか自然が豊かだったのか、今は様変わり。
この季節フランス料理ではおなじみの「的鯛』（サン・ピエール）は魚体の真ん中に黒斑。昔々、聖ヨセフがこの魚がくわえていた金貨を取り上げようとして杖で押さえた痕だと言う。どの的鯛にも付いているから、押さえまくったのか？この魚、頭と内蔵が大きく分止まりが悪いが、美味いからどうしても使いたくなる。
遠く霞む山々には雪が残り厳しかった冬の名残。 麓は小春日和。
灰色に見えた遠くの山々も、したたるような緑に変わるこの季節が山歩きの醍醐味。
山菜、ハーブがあちこちに見受けられる。雪が溶ければ岩魚釣りの季節も間近。
今は自然が変わってしまったが、田舎の山菜、タンポポ、クレソンはまだ元気
北海道産のホワイトアスパラガスも良いけどフランス産のホワイトアスパラガス、これが美味い。いずれもほんのり「苦さ』が春を告げる。
携帯電話を取り替えるのも億劫なのに、プログをミクシーからのお引っ越し。最初に書いた文章は送信したと思ったが、何処か消えてしまった。慣れるまで時間がかかりそう。

的鯛はヨセフさんの仕業でしたか。的鯛は昔お金持ちだった鯛なんですね。もう金貨をくわえてる鯛って見ないからヨセフさんいっぱい金貨集めたんでしょうね。

食材ですね。
今度鮮魚売り場で注意して見てみます。
